If you are still looking for menu ideas for your Mother’s Day brunch this Sunday, give Home Fries a try. They are the perfect side dish to any brunch menu. They go well with toast and eggs, pancakes, waffles, and French toast. Plus, they are easy to make so you won’t need mom’s help. Mom deserves a break, let her sleep in.

We cooked our Home Fries on our Thermador gas rangetop. The star burner cooked the potatoes evenly and thoroughly. The onions and peppers add a nice flavor to the potatoes. Feel free to serve the potatoes with ketchup or Tabasco sauce. Home fries are the perfect addition to any brunch meal.

Home Fries

Olive oil
1 small onion, diced
1 large green pepper, diced
5 large Russet potatoes, diced
Salt and pepper, to taste

Directions

Coat a large skillet with olive oil. Turn on the stovetop to medium heat. When the oil is hot, add the onion and green pepper. Cook until tender, about 5 minutes. Add the diced potatoes. Stir until all of the potatoes are coated in olive oil. If you need to add a little more, carefully add olive oil to the pan. Cook potatoes until tender and crisp, stirring frequently. This will take about 20 minutes. Season with salt and pepper. Serve warm.
