With spring fast approaching, it’s time to shed our heavy winter coats and comfort-food cravings. And what’s better than a standout selection of seafood dishes to help get us ready! From deliciously-seasoned salmon, to luscious lobster, a perfectly prepared catch makes for a delightful meal as we inch toward the warmer months of the year. Here are some of my favorite fish dishes that have spring written all over them – but can still be enjoyed year-round!

Orangey-pink in color, salmon is one seafood dish that is as colorful as it is tasty. A favorite in my home, there are endless ways to prepare this fantastic fish – from baked, to steamed, to grilled, to sautéed. One of my favorite recipes is a pan-cooked Salmon with Lemon and White Wine Butter Sauce. With a rich white wine sauce made from fresh shallots, onions, garlic and of course, wine and lemon juice, it adds just the right flavor to set your dish apart. To prepare my dish, I place the salmon in a cooking pan atop my Thermador Liberty™ Induction Cooktop. For a fish of the fancier variety, nothing does the job quite like a luscious lobster. Perfect for a decadent dinner or a light spring salad, lobster can be served up in several ways. I personally enjoy a classic lobster tail recipe, and my favorite is aptly named – Lobster Thermador! With a delicious mix of finely chopped shallots, white wine, parsley, fresh lemon juice and Parmesan cheese, this is one dish that stands out from the crowd. It wouldn’t be a seafood soirée without shrimp – and this mouth-watering recipe is the perfect addition to any meal. As easy to make as it is flavorful, shrimp is one of my all-time favorite seafood dishes because it can serve as a standalone dish or provide the perfect supplement to a larger meal. When cooking shrimp, I opt for the freshest, largest shrimp that I can find – often skipping the supermarket and heading straight to my local seafood merchant for the best selection. My preferred method of cooking is a pan-seared style. After the shrimp are peeled and deveined, I add a simple mixture of salt, pepper and sugar. Returning to my Thermador Liberty™ Induction Cooktop, I cook until the shrimp are a spotty brown. Add some fresh lemon and a few garnishes, and voila! Serve as a topper for a side salad or see it star as the main course!
