Breakfast Recipe: Eggs with Chorizo

Ingredients:
½ lb chorizo sausage
8 eggs
Salt and pepper
½ cup chopped fresh cilantro
Warm corn tortillas
Shredded Monterey Jack cheese
Directions:
Brown the chorizo over medium heat, breaking it up into small bits. Drain off grease.
Beat the eggs together with salt and pepper to taste; add to pan with chorizo and sprinkle in the cilantro. Scramble the eggs until they reach the soft-set stage.
To serve, spoon eggs into warm tortillas, sprinkle with cheese and fold over to eat.
