Ultimate Indulgence: Chilled Chocolate Truffles

While ice cream and gelato may be the typical go-to cool summer treat, these chilled Chocolate Truffles are the perfect sweet for those warm summer nights. Simple yet scrumptious, this recipe features only four ingredients, but there are oh so many ways to personalize the final product when you plate it, such as topping off with milk chocolate shavings, dusting with sifted cocoa powder, or sprinkling on grated coconut. For an extra frosty chocolate treat, chill these truffles a bit longer than the required hour, keeping them in the fridge until it is time to indulge!
Ingredients
One 8-ounce package of cream cheese, softened
3 cups semi-sweet chocolate chips, melted
3 cups confectioners’ sugar, sifted
1 1/2 teaspoons pure vanilla extract (you can substitute the vanilla extract with raspberry, orange or coffee liqueur)
Options for rolling: milk chocolate shavings, sifted cocoa powder, ground walnuts or pecans, grated coconut
Directions
Beat cream cheese until smooth in a large bowl. Gradually beat in sugar until well blended. Stir in melted chocolate and vanilla (or liqueur) until no streaks remain. Chill for one hour. Shape into one inch balls and roll in ground nuts, cocoa, chocolate shavings or coconut. Store in parchment-lined candy tins in a cool place. Makes 60.
