Two Peas and Their Pod: Grilled Asparagus with Lemon & Feta Cheese

We love fresh, simple, and healthy dishes that are tasty and nutritious. Since our kitchen is currently undergoing a Thermador makeover, we have been using our grill to create delicious meals. One of our favorite vegetable side dishes is grilled asparagus with lemon and feta cheese. This dish is easy to prepare and goes well with any meal.
Toss asparagus spears with a little bit of olive oil, fresh lemon juice, and salt and pepper. Place on a hot grill and cook until tender, but still crisp. Transfer hot spears to a serving platter and garnish with feta cheese. The bright green asparagus are smoky and crisp. The hint of lemon is refreshing while the creamy feta cheese adds a nice texture and flavor to complete the dish.

Grilled Asparagus with Lemon and Feta Cheese
1 bunch of asparagus, washed, ends trimmed
2 tablespoons olive oil
2 tablespoons fresh lemon juice
Salt and pepper, to taste
1/3 cup feta cheese
Directions
1. Preheat grill to high heat.
2. Put asparagus spears on a baking sheet, toss with olive oil and fresh lemon juice. Season with salt and pepper.
3. Place asparagus spears perpendicular to the grates on the hot grill. Close grill lid and cook for two minutes. Using long tongs, turn the asparagus over and cook for two more minutes or until asparagus spears are browned and tender-crisp. Remove from grill and place on a serving platter.
