I normally am a chocolate dessert person. I love fruit and eat my fair share, but when it comes to dessert, I usually go for the chocolate option.

Until summer rolls around.

Summer is the time for light desserts, for fruit cocktails and cherry pies. And this time of year, especially, I can’t resist a good cobbler that has been made with fresh fruit.

One of my favorite cobblers is this Plum and Peach Cobbler. I love the combination of the tart plums with the sweet, juicy peaches. Both fruits are in season right now and at their peak. I bought a bag of plums and peaches at our local farmer’s market to make this cobbler. I was tempted to eat them all because they were so good, but I knew the cobbler would be well worth the wait.

This rustic cobbler is simple to make and will make your house smell delightful as it bubbles up in the oven. I like to serve the cobbler with a dollop of whipped cream or a scoop of vanilla ice cream.

Celebrate summer by making this Plum and Peach Cobbler. It is the perfect way to enjoy summer’s ripe plums and peaches.

Plum and Peach Cobbler

For the fruit:

—4 cups mixed plums and peaches fruit (peel, remove pit, and slice fruit)
—½ cup brown sugar
—2 tablespoons corn starch
—1/3 teaspoon lemon zest
—1/4 teaspoon ground cinnamon

For the cobbler topping:

—1 cup all-purpose flour
—1 1/2 teaspoon baking powder
—½ teaspoon cinnamon
—1/4 teaspoon salt
—¼ cup sugar
—1/4 cup cold unsalted butter, cut into tablespoons
—1/4 cup buttermilk
—1 teaspoon vanilla extract
—1 large egg
—Cinnamon and sugar-to sprinkle on before baking

Directions:

1. Preheat oven to 350°F. Spray a 2-quart casserole dish with cooking spray and set aside.
2. In a large bowl, combine the plums, peaches, brown sugar, cornstarch, lemon zest, and cinnamon.
3. In a medium bowl, whisk the flour, baking powder, cinnamon, salt, and sugar together. Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs.
4. In a glass measuring cup, mix the buttermilk, vanilla, and egg together. Pour over the dry ingredients and stir just until moistened. The dough will be sticky.
5. Pour the fruit mixture into the prepared casserole dish. Drop batter on top of the fruit. Sprinkle cobbler with cinnamon and sugar. Place casserole dish on a baking sheet and bake for 35-40 minutes, or until golden brown and bubbling. Let cobbler cool to room temperature. Serve with whipped cream or ice cream, if desired.
